12 eggs
1 pint of cottage cheese
1 tsp baking powder
1 tsp of salt
1 cup of flour
1 cup of melted butter
1lb of shredded cheddar cheese
2 sweet potatoes (optional)
2 cans of green chile (Optional)
Preheat oven to 400 (optional for sweet potatoes)
Cook sweet potatoes for 30-40 minutes
peel skin and mash into a bowl
Mix all ingredients into a bowl and whisk
Pour into a 9”x13” oven proof pan
Fold in optional green chiles and Sweet potatos
Put in fridge for later or if ready to cook put in oven at 350 degrees for 45-55 minutes
serve with favorite favorite breakfast side
