Irish Stew


  • The Key here is to make sure you dredge your meat in flour before browning it for the stew

  • 1.25 LBs Mutton, lamb or Beef

  • Half red onion

  • 1 small can tomato paste

  • 2 lbs of potatoes (you choose)

  • 2-3 carrots (Multicolor)

  • 2 cloves of Garlic

  • 1 Guinness

  • 2 bay leaves

  • Fresh thyme

  • Fresh Parsley

  • 4 cups of Beef Stock

  • 1 stick Irish butter

  • 1 tbsp Worcestershire sauce

  • salt

  • Dredge meat: evenly coat meat in flour

  • heat oil in cast iron skillet and add meat and cook until outside is browned.

  • remove meat to a plate and scrape fond (leftovers in pan) to your cast iron pot

  • heat oil with fond in cast iron pot and add onion, tomato paste to saute for a few minutes, then add garlic for 1 minute.

  • Deglaze pot by adding Guinness and cook for 2-3 minutes

  • add rest of ingredients and set to simmer for 1.5-2 hours.
